Featured Recipe - Avocado Turkey Tortilla Wraps

Looking for a way to use your leftover holiday turkey? Here’s a delicious, low-calorie tortilla wrap with sliced turkey, avocado and cheese. This is an easy meal to take to work or school, or to prepare for a quick family dinner.

Prep time: 15 minutes

Servings: 2 per recipe

Ingredients 

  • 2 whole wheat tortillas (8 inches), room temperature
  • 2 tablespoons fat-free mayonnaise
  • 1/4 pound thinly sliced turkey
  • 8 thin slices tomato or well-drained chunky salsa
  • 2 teaspoons finely chopped jalapeno pepper
  • 2 teaspoons minced fresh cilantro
  • 1/2 medium ripe avocado, peeled and thinly sliced
  • 1/4 cup shredded reduced-fat cheddar cheese

Instructions

  1. Spread tortillas with mayonnaise.
  2. Top each with turkey, tomato, jalapeno, cheese, cilantro and avocado.
  3. Roll up and cut in half.
